Pierre Peters Cuvee de Reserve Grand Cru - $80
Champagne, France
This is a 100% Chardonnay Cuvee with fruit sourced exclusively from Grand Cru villages of Cote des Blancs. It is given extra depth and complexity by the addition of 40% reserve wine to the blend. Their reserve wine is a blend based on a system of blending 20 different vintage years with the oldest barrel from 1988. This wine is a symphony of fruits ranging from citrus fruits and green apple that transitions in to Asian pear all while balanced with the classic aromas of brioche bread, biscuit, and almond. This is a wine with a taught character that is best paired with fish and different birds.

2023 Chateau de Rouet Cotes de Provence Rose Reservee - $18
Provence, France
Delicate salmon color. Intense nose bringing notes of small fruits, blueberries, and raspberries. Fruity palate with elegant fresh fruit flavors. Round body, the wine gains a lot of volume on the mid-palate, prolonging into a long, rich aftertaste. Good terroir expression. Pair with cured meat, grilled white meat, Provence flavored and spicy dishes.

2023 Pierre Martin Chavignol Sancerre Sauvignon Blanc - $35
Loire Valley, France
Persistent and focused, this wine really sings with its intense notes of lemon verbena, fresh-cut grass, and strong minerality, all elegantly displayed on a mouthwatering structure. The long finish is bright and lacy, with lovely detail.

2022 Pierre Gaillard Condrieu Viogner - $50
Northern Rhone Valley, France
By law 100% Viognier. These grapes are harvested by hand then aged in 10% New French oak for 7 to 8 months. The wine is stirred while aging to develop flavor and body. The Rhone is hot so produces wines that show off on the nose and palate with bright tropical fruits, intense floral aromas. All accompanied with a round texture making this a beautiful wine for pairing with richer dishes or stand-alone enjoyment.

2022 Pierre Vincent Girardin Le Noyer Chardonnay Cotes du Jura - $75
Jura, France
This is the first-ever vintage of this wine here in the United States, hailing from less than 1-acre vineyard in the alpine region of Jura. Famed Burgundy prodigal winemaker Pierre worked with this plot of 65-year-old vines for a Meursault-like expression of Chardonnay. Only 50 cases in the country, 10 are at the Refectory.
